Dark Chocolate Pumpkin Protein Muffins




I have been all about the protein muffins lately. This one is a mash up of several recipes I have made for years but with protein powder added to boost the good for your quotient. These muffins are very moist because of the pumpkin puree and very hardy. I have made these with half brown sugar and half stevia to lower the calories a bit... but you can use all stevia or all brown sugar if you like. I like the flavor of brown sugar, so I prefer half and half. Adding a little ginger or some chipotle chili powder is also delicious in this recipe.

Banana and Granola Protein Muffins


My friend Sandy posted these lovely looking Cranberry Orange Protein Muffins using her favorite protein powder to make them a breakfast powerhouse. Since I also use the same protein powder, (thanks Sandy!) I knew I was going to have to follow her lead and come up with my own riff. In my house anything banana goes over really well, so I took her delicious recipe and added some ingredients of my own and altered the recipe to fit.

Kimchi Fried Rice with Bacon


I have a serious love affair with kimchi. I can eat the stuff everyday. I have been known to eat it with almost anything because its just so delicious and addictive. Kimchi is also super good for you. Because kimchi is fermented, it contains lactobacilli which helps in the digestion process. Probiotics are also created by the fermentation process which helps your body fight off infection. It's low calorie and packs a great punch of spicy flavor. It pairs beautifully with eggs, noodles and rice as well as lots of vegetables and meats. It's usually economical to buy, but you can make it yourself at home fairly easily and have it on hand all the time, if you like.

I love Asian food of all kinds, so I have been trying to learn how to make some of my favorite restaurant dishes at home. It's so much more economical, and I get to eat it more often than if I were to depend on dining out all the time to have it. It's also a lot of fun to get into the kitchen and try something new with my kids.

Pumpkin and Sausage Soup with Mushrooms and Sage


Keeping with the Autumn theme, today I'm bringing you this delicious pumpkin soup. I made it twice this week, partly because my kids requested it and because I wanted to try making it with different ingredients to make it as low calorie as possible. It's a comforting, filling and very savory with a touch of spicy heat. I can hardly wait to make this for a snowy weekend at home this winter.
